Okra Known as Lady's Finger in India, Vendakkai in Tamil, Bindi in Hindi is used in lot of Indian curries and gravies. This vegetable is recommended for people who scores less in Maths. I am not sure about the reason. This vegetable is rich in nutrients and easily available in India. Stuffed okra is served as a side dish to Rice. Instructions:
- Dry roast all the ingredients except roasted peanuts and shredded coconut from table 2. Grind it to a coarse paste in a blender / Mixie. If raw peanuts are available instead of roasted peanuts, then dry roast raw peanuts also.
- Wash Okra and dry it in paper towel. Remove the two ends of Lady's finger.
- Carefully slit open Lady's finger on one side using a sharp knife.
- Place the okra's in a bowl. Add a tsp of oil and mix well. Place the stuffing (grind-ed powder) inside okra.
- Heat Oil in a pan. Add mustard all allow it to splutter. Add curry leaves and fry for a min. Add the stuffed okra and cook on all sides by carefully turning okra with a ladle.
Tips:
Adjust red chillies to your taste.
Fry Okra in medium or low flame and allow okra to cook fully.
For best results, use non-stick pan.
