Ginger chopped | 1 tbsp |
Garlic chopped | 1 tbsp |
Fennel seeds | 1 tsp |
Green chillies chopped | 1 |
Anistar | Half piece |
Cinnamon stick | 1 inch |

Oil | 2 tbsp |
Mixed Vegetables | 2 Cups |
Tomato chopped | 1 |
Yogurt | 2 tbsp |
Lemon Juice | 1 tsp |
Sugar | 1 tsp |
Green chillies | 1 |
Kastoori Methi | 1/2 tsp |
Mint Leaves | 10 |
Coriander leaves | 2 stalks |

Turmeric powder | 1/4 tsp |
Coriander powder | 2 tsp |

Onions chopped lengthwise | 1 Cup |
Corn flour | 1 tbsp |
Milk | 2 tsp |
Food colour | Pinch |
Rose water | 1 tsp |
Ghee | For Garnishing |
Roasted cashews | For Garnishing |
Coriander Leaves | For Garnishing |
Instructions:
- Soak Basmati rice for 1 hour or as per instructions given in rice bag. Pressure cook basmati rice along with other ingredients in table 1 (Bay leaf, Bay leaf, Cloves, Anistar, Cinnamon, Cardamom and Salt) and enough water(2 cups or as per instruction in rice bag) for 1 whistle.
- Grind all the ingredients in table 2 into smooth paste by adding enough water in blender.
- Take vegetables in a big bowl. Mix the remaining ingredients in table 3 except oil. Also add grind-ed mixture from table 2.
- Heat oil in a pan. Fry the mixed vegetable mixture in medium flame till the vegetables are half cooked.
- Mix corn flour and onions. Heat Oil for deep frying. Deep fry onions till it turn brown colour. Remove the excess oil by placing fried onions in paper towel.
- Pre-heat oven to 350 F. Line the baking pan with aluminium foil. Arrange mixed vegetables mixture. Top it with half cooked rice.
- Mix milk, food colour and rose water. Sprinkle milk on top of cooked rice.
- Lastly garnish with Ghee, fried onions, roasted cashews and coriander leaves. Seal the baking pan with aluminium foil. Bake it in oven for 30-35 mins till the vegetables are fully cooked.

Tips:
- Adjust green chillies and chilli powder to your taste.
- Instead of pressure cooking, cook rice in a big vessel with lots of water. When the rice is half-cooked, strain the water.
- Fried onions are easily available in market. Corn flour is added to get crispy onions. Adding corn flour is optional
- Salt is added in 2 places (to basmati rice and to vegetables). So carefully adjust the salt.
- Add vegetables of your choice( I have used Carrots, Beans, Green Peas, Cauliflower and Potato). Cut big slices of vegetables.
My savior is also the rice cooker, all the time and all the way. There's so many fabulous blend of flavors, the spices, herbs and milk, all that worked so perfectly for a delicious outcome.
