Keerai Sadam | Spinach Rice

Keerai Sadam
Spinach is rich in nutrients. Green leaves are always rich in iron, folic acid and calcium. This green leafy vegetable is known as pasalai keerai in tamil. Spinach Rice is a easy quick Lunch box recipe that can be prepared with left over rice. I have used basmati rice for Spinach Rice preparation. Normal rice can also be used for this keerai sadam. Yields: 2 Servings
Keerai Sadam

Ingredients:
Table 1: To Grind
Spinach tightly packed2 Cups
Green chillies3
Coriander leaves2 stalks
Mint Leaves10

Table 2:
Cooked Basmati Rice2 Cups
Oil1 tbsp
Cloves2
Cinnamon stick1 inch
Cardamom1
Fennel seeds1 tsp
Ginger and garlic finely chopped1 tbsp
Onions chopped lengthwise1/2 Cup
SaltAs needed
Turmeric powder1/4 tsp
Coriander powder1 tsp
Chilli powder1 tsp

Instructions:

  • Wash spinach, coriander leaves and mint leaves. Grind it into smooth paste by adding enough water.

  • Heat oil in a pan. Add cloves, cinnamon stick, cardamom and fennel seeds. After a min, add finely chopped ginger and garlic. Fry till raw smell goes off.

  • Add onions and fry till they turn translucent. Add grind-ed mixture.

  • Add salt, turmeric powder, coriander powder, chilli powder and fry till raw smell goes off. Mix with cooked basmati rice.

Tips:
Adjust green chillies and chilli powder to your taste.
