Kadai Vegetable Gravy
Kadai Vegetable is a spicy Indian gravy served as a side dish to Indian Flat breads. Indian spices are freshly ground and added to the gravy which adds more flavor and taste to the recipe. I have added Carrots, Green beans, cauliflower and potato. Mix and match vegetables of your choice to suit your taste buds. Please check below for step by step instructions and pictures for preparing spicy Indian Kadai Vegetable gravy.

Yields: 3 Servings
Kadai Vegetable

Ingredients
Table 1: To dry roast and grind
Coriander seeds | Dhaniya2 tsp
Cumin seeds | Seeragam1 tsp
Fennel seeds | Sombu1 tsp
Red chillies3
Black pepper | Milagu1 tsp
Cloves | Krambu1
Cinnamon stick | Pattai1 inch
Kasoori Methi crushed1/2 tsp

Table 2:
Oil1 tbsp
Ginger and garlic finely chopped1 tbsp
Onions chopped1/2 Cup
Tomato paste1/4 Cup
Cooked Vegetables1.5 Cup
SaltAs needed
Coriander leavesFor Garnishing

Instructions:
  • Dry roast all the ingredients mentioned in table 1 and grind it coarse powder.

  •  Heat oil in a pan. Add finely chopped ginger and garlic. Fry till raw smell goes off. Add onions and fry till they turn translucent.

  •  Add tomato paste and fry till raw smell goes off. Add the ground powder from ingredients in table 1.

  •  Add cooked vegetables and 1/4 cup water. Allow the gravy to boil. Switch off the stove and garnish with coriander leaves.

Tips:
Adjust red chillies to your taste.
Add vegetables of your choice. I have added carrots, beans, potato and cauliflower.
