Instructions:
- Wash and peel the outer skin of radish. Grate radish and squeeze out the extra water from radish.
- Make a soft dough by adding atta, salt along with extra water (got from squeezing radish). Allow it to rest for 15 minutes. Take a fraction of dough and make balls of medium size lemon.
- Heat Oil in a pan. Add ajwain seeds and fry for a min. Add finely chopped onions, finely chopped ginger and finely chopped green chillies. Fry till raw smell goes off.
- Add grated radish and fry for 2 to 3 mins. Add salt, turmeric powder, coriander powder and chilli powder. Fry till raw smell goes off. Switch off the stove. Add finely chopped coriander leaves and allow the mixture to cool.
- Take a fraction of dough and make ball of slightly bigger size of ball prepared for outer layer . The number of outer layer balls and stuffing balls should be same. Take a outer layer ball, using hand pat gently and flatten to 2-3 inch diameter. Keep the stuffing in centre and close the outer layer. Using rolling pin, flatten the ball to to 10-12 inch diameter.
- Heat dosa pan. place the paratha in dosa pan. Drizzle 1/2 tsp of ghee or oil if needed. Cook till golden spots appear on some places. Turn and drizzle 1/2 tsp of oil. cook until golden spots appear on the other side also. Repeat the process for remaining flatten dough balls.
