Egg Idiyappam
Protein rich egg is always my favorite. It comes to hand, whenever there is no vegetable in home. Idiyappam is my all time favourite.  I have already posted Biryani SevaiCoconut Sevai,Lemon sevaiTamarind Sevai and Tomato sevai. Egg Idiyappam is a twist to normal Idiyappam. Surely a treat to egg lovers. Please check below for step by step instructions and pictures for preparing South Indian Spicy Egg Idiyappam | Muttai Sevai.

Cook Time : 20 mins
Ready In : 30 mins
Yields : 2 servings
Muttai Sevai

Instant Rice Sevai1.5 Cups
Oil1 tbsp
Mustard1/4 tsp
Ginger and garlic finely chopped2 tsp
Green chillies finely chopped1
Onions finely chopped1/4 Cup
Tomatoes finely chopped1/4 Cup
Medium sized Eggs3
SaltAs needed
Turmeric powder1/4 tsp
Coriander powder1 tsp
Chilli powder1 tsp
Coriander leaves chopped2 stalks

Cook instant rice sevai as per instructions given in packet. Over cooking the sevai will make it sticky. Mix 1 tbsp of Oil and keep it ready.

Whisk 3 medium sized eggs and keep it ready.

 Heat Oil in a pan. Add mustard and allow it to splutter. Add finely chopped ginger, garlic and green chillies. Fry till raw smell goes off.

Add finely chopped onions and fry till they turn translucent. Add tomatoes and fry till they turn mushy.

Add whisked eggs followed by salt, turmeric powder, coriander powder and chilli powder. Fry till eggs are cooked. Switch off the stove and garnish with coriander leaves. Mix with cooked rice sevai.

Adjust green chillies and chilli powder to your taste.
Finely chopped ginger and garlic can be replaced by ginger garlic paste.
