Nowadays it is very cold outside urging us to drink hot coffee or tea frequently. I restrict myself from drinking one cup of coffee/tea per day. Instead I choose healthy vegetable soups. Soups are always my kid's favourite. I have already posted Indian style Tomato soup and Horsegram soup. Sweet corn vegetable soup is an easy and quick vegetarian soup that can be prepared from scratch within 30 mins.Please check below for step by step instructions and pictures for preparing Sweet corn vegetable soup.

Indian style soup prepared with Sweet corn, carrots and beans.

Ingredients:
Cooked Sweet corn kernels : 1 cup
Corn flour : 1 tbsp
Butter : 2 tsp
Garlic finely chopped : 1 tsp
Carrot and beans finely chopped : 1/2 Cup
Salt : As needed
Milk : 1/4 Cup
Pepper : For Garnishing

Instructions:
1.Blend 1/2 cup of sweet corn to fine paste and keep it ready.  Also mix corn flour in 1/4 cup of water and keep it ready.

2.Heat butter in a pan. Add finely chopped garlic and fry till raw smell goes off. Add carrot and beans. Add 1/4 cup water and cook the vegetables. Once the vegetables are cooked, add corn flour mixture, sweet corn paste and remaining 1/2 cup sweet corn kernels.

3.Add 2.5 cups of water, salt and allow it to boil. Once it reaches desired consistency, add milk and allow it to boil. Lastly garnish with freshly ground pepper.

Tips:
1.Finely chopped spring onions can be used for garnishing.
2.Apart from carrots and beans, cauliflowers can also be added to the soup.
3.Adjust pepper to your taste.
4,I have used frozen corns. I boiled it in 1/2 cup of water for 2 to 3 mins in stove. In case if you are using fresh corn, pressure cook it for 4 to 5 whistles.
