Preparation Instructions:
Personally I don't like using basmati rice for burrito bowl. Either use mexican rice or sona masoori rice.
If we plan it properly, making burrito bowl is an easy task. It is always a big hit.
You can also use store bought tomato salsa and guacamole.
Alternatively cilantro, garlic and lemon juice can be ground and added to rice.
- Cooked Red beans: Wash and Soak red beans overnight. Pressure cook for 4-5 whistles. Add Salt and keep it ready. I have also tried with Red kidney beans | Rajma beans. You can also use black beans.
- Cilantro Lime Rice: Cook Plain rice or Mexican rice. I used sona masoori rice. Add 1 tsp Lime zest, 1 tsp Lime juice and 2 stalks chopped cilantro. Adjust salt to your taste. Prepare Guacamole and Mild Tomato Salsa.
- Onions and Green Pepper: Cut onions and green pepper longitudinally. Fry it in 1 tsp of oil separately. Corn Kernels: Cook corns separately and transfer it to bowl. I used frozen corn.
- Apart from these you need Store bought sour cream, Cheddar pepper jack cheese and lettuce.
Preparing Burrito Bowl:
- Add 1/2 Cup of cilantro lime rice in a serving bowl. Place the red beans on top of rice.Place fried onions and green capsicum / green bell pepper on top of rice.
- Spread corn Kernels on top. Place 3 tbsp of Mild tomato Salsa on top. Adjust tomato salsa to your taste.
- Here comes my favourite part.Place 3 tbsp of Guacamole.Add required Sour cream on top. I love sour cream, so added a bit more. Weight watchers can adjust sour cream.
- Garnish with cheese followed by lettuce. Enjoy with Tabasco sauce.
