Coconut Burfi | Thengai Barfi
Nostalgic memories occupies my mind whenever I think of this coconut burfi. We visit aunty's house during summer holidays. Her house is in a village and it is surrounded by lot of coconut trees. She prepares lot of different recipes and one of the sweets which I find it every time is this coconut barfi. She is an expert in doing it and prepares it from the fresh coconut. Coconut burfi is an easy, quick and healthy dessert. My kid loves this sweet and call it as white cake. Preparation Time: 5 mins
Yields : 15 pieces
Instructions:
- Heat 1 tsp of Ghee in a large pan. Fry cashews to golden colour. Remove the cashews.
- In the same pan, add shredded coconut and sugar. Stir it continuously in medium flame, till coconut and sugar are binded together and the mixture starts to leave the pan.
- Add roasted cashews to the mixture. Take a plate/ tray and generously grease it with 1 tsp of ghee. Spread the mixture in greased plate
- .Cut into desired shapes(squares or rectangles) using a knife.
- Allow it to cool completely.
Tips:
- Variations can be done by adding a pinch of cardamom powder.
- My aunt adds Roasted chana dal / Pottukadalai instead of cashews. It also tastes good.
There's no more coconut trees around my area these days but of course just like you, those days its so common. Coconut desserts are hard to resist and I adore the outcome.
