Vegetable Kothu Parotta

Kothu Parotta is a very popular recipe from Tamil Nadu. It literally means minced parotta. It is usually prepared with chicken and egg. I have tried vegetarian version of Kothu parotta. This kothu parotta is usually served with Onion Raita. Please check below for step by step instructions and pictures for preparing vegetable Kothu Parotta .







Preparation Time: 5 mins
Cook Time : 10 mins
Ready in : 15 mins
Yields : 1 Serving

Ingredients:
Oil                                          
2 tsp
Green chillies finely chopped
2
Onion(Finely chopped)
1/2 Cup
Tomato chopped
1/4 Cup
Parotta chopped
2
1/2 Cup
Coriander leaves chopped  
2 stalks





Instructions:
  • Heat Oil in the pan and add  green chilli and onions. Fry till onions turn translucent. Add tomato and fry till tomatoes turn mushy.  

  • Add parotta and fry it for a min. Add vegetable salna and reduce to low flame.
  • Add coriander leaves. Mince and mix all the ingredients using wooden spatula or heavy iron spatula.
Tips:
  • Adjust green chillies to your taste.
  • If you need a dry kothu parotta, reduce the quantity of salna and tomato.
  • Relish this vegetable kothu parotta with Onion Raita
