Paneer is Indian cottage cheese. Paneer bhurji is a simple dry curry prepared as a side dish to chapati or roti. Paneer burji also goes well with curd rice. I had some fresh home made paneer left after preparing paneer paratha, so prepared this quick and easy side dish for chapati. Ingredients:
Paneer shredded

1/2 Cup
|
Oil
|
2 tsp
|
Ginger and garlic finely chopped
|
1 tbsp
|
Onions chopped
|
1/4 Cup
|
Tomatoes chopped
|
1/4 Cup
|
capsicum chopped
|
1/4 cup
|
Green chillies slit open
|
2
|
coriander powder
|
1 tsp
|
chilli powder
|
1 tsp
|
Coriander leaves chopped
|
For Garnishing
|
Salt
|
Instructions:
- Heat oil in a pan. Add finely chopped ginger,garlic and green chillies. When raw smell goes off, add onions. Fry till they turn translucent.
- Add chopped tomatoes and fry till they turn mushy. Add capsicum and fry for 2 mins.
- Add shredded paneer and fry till paneer is cooked. Add salt, coriander powder and chilli powder. Fry for 2 mins. Garnish with coriander leaves.

Tips:
Adjust green chillies and chilli powder to your taste
Green chillies also can be chopped finely.
