Schezwan Spaghetti is a Indo-Chinese-Italian Fusion. Instead of buying ready made Schezwan sauce, we can easily prepare it in home. This sauce can be used for Schezwan rice and Schezwan Noodles. Onions, carrot, capsicum and cabbage are fried and cooked in schezwan sauce. Then the fried veggies are added to the cooked spaghetti. Instructions:

- Soak red chillies in vinegar for 30 mins. Grind red chillies, vinegar, ginger and garlic into smooth paste by adding enough water in blender.
- Heat oil in the pan and add the ground mixture. After 2 mins add white pepper, soya sauce, sugar and little water. Cook in low flame till the oil separates. Transfer it to a bowl.
- Cook spaghetti with 1/2 tsp of salt in boiling water for 12 minutes or follow the instructions as per given in spaghetti packet. Drain the excessive water by transferring pasta to colander.
- Heat oil in the pan and add finely chopped garlic. Once raw smell goes off, add onions and fry it till the onions turn translucent.
- Add carrots and cabbage. Fry for 2-3 mins till the carrots and cabbage are half cooked. Add chopped bell pepper / capsicum and fry for 2 mins. Capsicum should retain its crunchiness.
