Curd Kuzhambu
Thayir Kuzhambu is a South Indian gravy prepared with curd | yogurt as main ingredient. This Kuzhambu can be prepared within 10 mins and can be served as a side dish to rice. Yields: 2 servings
yogurt gravy

Ingredients:
Curd | Yogurt1 Cup
Oil1 tbsp
Mustard | Kadugu1/4 tsp
Cumin seeds | Seeragam1/2 tsp
Ginger and garlic finely chopped2 tsp
Green chillies finely chopped2
Curry Leaves3-5
Onions chopped1/4 Cup
Turmeric powder1 tsp
SaltAs needed

Instructions:

  • Mix salt with yogurt and keep it ready. Only if the yogurt is thick as in below picture, then add 1/4 Cup water, salt and whisk well.

  • Heat Oil in a pan. Add mustard and allow it to splutter. Add cumin seeds and fry for a min.

  • Add finely chopped ginger, garlic, curry leaves and green chilli and fry till raw smell goes off. Add onions and fry till they turn translucent.

  •  Add turmeric powder and fry till raw smell goes off. Switch off the stove and add it to curd.

Tips:
Adjust green chillies to your taste.
Don't replace fresh ginger and garlic with ginger garlic paste.Minced pieces of ginger and garlic gives a unique taste to this kuzhambu.
