Last week we shifted to new house. I was quite busy with unpacking and arranging things. So couldn't concentrate in Nalabagam. Today I am sharing an authentic recipe from Tamil Nadu - Vendakkai Mandi.  Lady's finger is rich in dietary fibers, minerals and vitamins. It is a low calorie vegetable and one of the suggested vegetable for weight reduction. Mandi is nothing, but water got by washing rice. Cook Time: 20 mins
Yields: 3 Servings
1 Vendakkai Mandi

Ingredients:
Gingelly Oil1 tbsp
Mustard1/4 tsp
Curry Leaves4 to 6
Onions chopped1/2 Cup
Green chillies slit lengthwise2
Lady's Finger | Okra1/2 Cup
Tomato chopped1/4 Cup
TamarindHalf Lemon size
Thin Coconut milk1/2 Cup
Rice washed water1/2 Cup
Turmeric powder1/4 tsp

Instructions:
Heat gingelly oil in a pan. Add mustard and allow it to splutter. Add curry leaves. Add chopped onions, green chillies and fry till onions turn translucent.

Add lady's finger and fry till they are cooked. Add tomato and fry till they turn mushy.

Soak tamarind in hot water and extract tamarind juice. Discard seeds and fibers. Add tamarind juice to the pan. Add coconut milk and rice washed water. Mix well.

Add turmeric powder and allow the vendakkai mandi to boil. Simmer for 10 mins.

Tips:
Adjust green chillies to your taste.
