A quick and easy recipe for pasta lovers. Usually I try pasta recipes based on tomato pasta sauce. Nowadays my kid says a big no to red pasta. I was searching for cheese based pasta and saw this easy recipe in my library cook book. Please check below for easy and quick Spinach Pasta.
Pasta

1.5 Cups

Baby Spinach tightly packed

2 Cups

Olive Oil
|
1/2 tbsp

Lemon Juice
|
1 tsp

Onions finely chopped
|
1/2 Cup
|
Garlic finely chopped
|
1 tbsp
|
Red Chilli Flakes
|
1 tsp
|
Freshly ground pepper
|
1 tbsp
|
Ricotta cheese
|
1/4 Cup
|
Salt
| |
Roasted Peanuts
|
1/4 Cup
|
Instructions:
- Cook pasta with 1/2 tsp of salt in boiling water for 12 minutes or follow the instructions given in pasta packet. Drain the excessive water by transferring pasta to colander.
- Heat olive oil in pan. Add finely chopped garlic. When the raw smell goes off, add chopped onions and fry till they turn translucent.
- Add baby spinach and fry it till spinach leaves shrink and the water left by spinach is fully absorbed.
- Add pepper powder and red chilli flakes. Switch of the stove.
- Add pasta, lemon juice ,salt and ricotta cheese.
Tips:
- To add crispness to recipe add roasted pine nuts.
- Variation can be doen by adding lemon zest.
- Ricotta cheese can be replaced by paramesan cheese
- Adjust pepper and red chilli flakes to your taste
