Spinach Pasta



A quick and easy recipe for pasta lovers.  Usually I try pasta recipes based on tomato pasta sauce. Nowadays my kid says a big no to red pasta.  I was searching for cheese based pasta and saw this easy recipe in my library cook book. Please check below for easy and quick Spinach Pasta.







Preparation Time:     5 mins
Cook Time :                20 mins
Ready in :                    25 mins
Yields :                         2 Servings 


Ingredients:
Pasta 
1.5 Cups
Baby Spinach tightly packed   
2 Cups
Olive Oil
1/2 tbsp
Lemon Juice
1 tsp
Onions finely chopped 
1/2 Cup
Garlic finely chopped 
1 tbsp
Red Chilli Flakes
1 tsp
Freshly ground pepper 
1 tbsp
Ricotta cheese
1/4 Cup
Salt
Roasted Peanuts
1/4 Cup



Instructions:
  • Cook  pasta with 1/2 tsp of salt in boiling water for 12 minutes or follow the instructions given in pasta packet. Drain the excessive water by transferring pasta to colander.
  • Heat olive oil in pan. Add finely chopped garlic. When the raw smell goes off, add chopped onions and fry till they turn translucent.

  •  Add baby spinach and fry it till spinach leaves shrink and the water left by spinach is fully absorbed.


  •  Add pepper powder and red chilli flakes. Switch of the stove.



  •  Add pasta, lemon juice ,salt and ricotta cheese.


Tips:
  • To add crispness to recipe add roasted pine nuts. 
  • Variation can be doen by adding lemon zest.
  • Ricotta cheese can be replaced by paramesan  cheese
  • Adjust pepper and red chilli flakes to your taste
