Egg Biryani | Muttai Biryani

Egg Biryani is an Indian Rice recipe served with mint raita or onion raita.  I have already posted a simple quick egg biryani cooked in electric rice cooker. You might ask why again one more egg biryani recipe. The answer is the below egg biryani is my mom's version and the electric rice cooker biryani is my simplified version. My mom won't use biryani powder still her biryani will be colorful and has lot of flavors  she adds tomato, lemon juice and yogurt to the egg biryani. My mom also marinates and fry the eggs before adding it to biryani. Please check below for step by step instructions and pictures for preparing my mom's version of South Indian Egg Biryani.

Muttai  Biryani

Ingredients:

Table 1:
Basmati Rice
1 Cup
Oil
2 tbsp
Bay leaf
1
Cinnamon stick
small
Cloves
3
Cardamom
1
Fennel seeds
1.5 tsp
Anistar   
1
Ginger and Garlic finely chopped
2 tbsp
Onions chopped lengthwise
1/2 Cup
Green chillies
2
Tomato chopped
1/2 Cup
Salt

Turmeric Powder 
1/4  tsp
Chilli Powder 
1 tsp
Curd
1  tbsp
Lemon juice
1  tsp
Coriander chopped
4 to 5 sticks


Table 2:
Hard boiled eggs
3
Oil
1 tbsp
Onions chopped lengthwise
1/2 Cup
Salt

Turmeric Powder 
1/4  tsp
Chilli Powder 
1 tsp
Coriander powder
1 tsp
Rice flour
1 tbsp
Besan flour
1/2 tbsp

Instructions:

  • Soak Basmati rice for 1 hour or as per instructions given in rice bag. 

  • Heat Oil in the cooker. Add Bay leaf, cinnamon, cloves, cardamom, anistar and fennel seeds. After 2 mins, add ginger, garlic and green chillies. Fry till raw smell goes off.

  • Add onions. Saute till onions till golden brown.Add tomato and fry till they turn mushy.


  • Add coriander leaves,salt, turmeric powder and chilli powder. Mix well.

  • Add curd, lemon juice followed by basmati rice.Saute for 2 mins till all the ingredients are blended


  • Add water ( I added 2 cups of water). Check the rice bag for the exact water measurement.Pressure cook for 3 whistles.


  • Hard boil 3 eggs. Quatered the eggs. Marinate the eggs for 15 mins with salt, chilli powder, coriander powder, rice flour and besan flour.


  • Heat oil in a pan. Fry onions(chopped lengthwise)  till it turns translucent. Sprinkle salt.


  •  Add marinated eggs and carefully fry till the raw smell of the powders goes off.

  • Add the fried eggs and onions to the cooked biryani. Serve it with raita.



Muttai Biryani / Egg Biryani / South Indian Egg Biryani / Egg Biryani without using biryani powder / 

Tips:

  • Adjust green chillies and chilli powder to your taste.
  • Cut the hard boil eggs into two halves instead of quartering eggs, if  it is difficult to marinate and fry the quartered eggs.
  • Finely chopped ginger and garlic can be replaced with ginger garlic paste.
  • Eggs contains some salt, so add salt accordingly for marination.

  2. I never tried the way the eggs are added. For me I just boil and add in. Its lovely how you fried the eggs with the spices. combined and cooked with the rest. Chicken briyani will take a rain check over this flavorful egg version.
