Spring Dosa
Spring dosa is an Indo-chinese breakfast / tiffin recipe. Spring dosa is  made by stuffing dosa with  Vegetables. I have tasted spring dosa in Udupi hotel and Saravana bhavan. In Udupi, the dosa was stuffed with vegetables and potato masala. In Saravana bhavan, it was only vegetable stuffing garnished with pepper powder. I have added only vegetable stuffing, but to add spiciness I prepared my favourite sauce and cooked the vegetables in that sauce. Please check below for step by step instructions and pictures for preparing Spring Dosa.

Ingredients:
Table 1:
Oil
6 tsp   
Dosa batter                              
3 cups

Table 2: For Filling
Veggies of your choice chopped lengthwise 
(Carrots, capsicum, cabbage ) 
11/4 Cup
Oil
1 tsp
onions chopped
1/4 cup
Coriander leaves chopped
2 stalks 
Salt



Table 3: For sauce
Red chillies

Vinegar
1.5 tbsp           
Ginger chopped              
2 tbsp
Garlic chopped
2 tbsp
White pepper
1.5 tsp
soya sauce
2 tsp
sugar
pinch
Oil
1tbsp


Instructions:
  • Soak red chillies in vinegar for 30 mins. Grind red chillies, vinegar, ginger and garlic.
                        
  • Heat oil in the pan and add the ground mixture. After 2 mins add white pepper, soya sauce, sugar and little water. Cook in low flame till the oil separates. Transfer it to a bowl.

  •  Heat oil in the pan and add  chopped onion and fry it till the onions turn golden brown. Now add the vegetables and fry till vegetables are cooked.  
  • Add the prepared sauce and fry it for a min. Lastly add coriander leaves. Remove the pan from stove.

  • Heat dosa tava in medium flame. When dosa tava is hot, take half cup of  dosa batter and spread evenly starting from centre. Pour 1 tsp of Oil on dosa circumference. Close it with lid and allow the dosa to cook.    

  • Repeat the process for remaining dosa.
