Ripe Banana Paniyaram

Potassium in Banana protects cardiovascular system, guards against high blood pressure and stroke. Consumption of banana helps in digestion. My kid loves banana and it will be always in our grocery shopping list.  My little one won't eat banana, if the banana skin has black marks(too ripe). Once the banana becomes ripe, I either make this simple ripe banana paniyaram or Strawberry Banana Muffins or Banana Walnut Bread or Vegan Banana Chocolate chips Muffins. Please check below for step by step instuctions for preparing Ripe Banana Paniyaram.

Yields :                        21 paniyarams


Ingredients:
All Purpose Flour / Maida
1.5 Cups
Oil
4 tbsp
Ripe Banana
2
Jaggery
1/2 Cup
Coconut small pieces
1/4 Cup
Cardamom powder 
pinch
Salt
pinch

Instructions:
  • Mash ripe banana using fork in a bowl and keep it ready. 

  • Take Jaggery in 1 cup of lukewarm water and allow it to dissolve. Once the jaggery dissolves, filter jaggery water using strainer to remove dirt.
  •  Add all purpose flour, mashed banana, jaggery water, coconut, cardamom powder and salt. Prepare a batter similar to dosa batter by adding water (if needed). As I didn't had fresh coconut, I have added desiccated coconut.

  •  Heat paniyaram pan. Add 1/4 tsp of oil in each paniyaram hole.

  • Pour batter in each hole. Cover it with lid and cook till paniyaram edges turn golden colour. Reduce to low flame and Carefully turn paniyaram using stainless rod or spoon. Cook till other side also turns golden colour or when the stainless rod inserted in the centre of paniyaram should come clean.

Tips:
I have added less jaggery. Adjust Jaggery to your taste. If you have sweet tooth, add more jaggery.
Adding coconut is optional. Add small coconut pieces to give crunchy taste to paniyaram.

  4. I don't have the pan but would love to try this lovely sweet snack. Of course, its also a great way of using ripe bananas for the simple burst of tastes.
