Rava Idli
Rava Idli is a spicy South Indian Breakfast prepared from Semolina | Rava | Sooji.  It is prepared as a variation of normal rice idli.  According to Wiki, during world war II when rice was short of supply, the famous MTR restaurant of Karnataka created this rava idli. The best thing I love about this rava idli is no soaking, no grinding and no waiting for fermentation involved. Enjoy this rava idli with coriander chutney or coconut chutney. Ingredients:
Table 1:
Beaten Curd1 Cup
Baking soda1/2 tsp
SaltAs needed
Grated carrot1/2 cup
Coriander leaves chopped2 stalks
Cashews (Optional)10
Oil for greasing idli platesAs needed

Table 2: To Fry
Oil2 tsp
Mustard1/4 tsp
Channa dal | Kadalai paruppu1 tsp
Urad dal | Ulutham paruppu1 tsp
Green chillies finely chopped2
Curry Leaves3-5
Ginger finely chopped1 tsp
Asafoedita powderPinch
Rava | Semolina | sooji2 Cups


Instructions:
  • Heat Oil in a pan. Add mustard when it splutters, add channa dal and urad dal. Fry till Chana dal turns golden colour. Add finely chopped green chillies, chopped curry leaves and finely chopped ginger. Fry till raw smell goes off. Add a pinch of Asafoedita powder.

  •  Lastly add rava and dry roast rava | semolina till it turns golden brown. Remove from Stove. Transfer fried items to bowl. Add curd, salt, baking soda and prepare a thick batter. If needed add some water. Also add grated carrot and coriander leaves. Mix well.

  •   Heat water in Idli vessel. Grease idli plate with oil and place a cashew in the centre of idli plate as shown in picture below.

  • Pour the batter in idli plate and cook for 10-12 mins in medium flame. To check whether the idli is cooked, insert a tooth pick in the centre of idli. If it comes out clean, then the idli is cooked.

Tips:
Adjust green chillies to your taste.
Adding cashew is optional.

  2. I also like that there's so soaking and fermenting. I am not a big fan of idli because I was overstuffed with it by my mum when I was younger. But my other half just loves it very much. Since its easy, I will make so these lovely ones for him.
