Vendakkai Thayir Pachadi

Vendakkai Thayir Pachadi is Lady's finger yogurt gravy. Lady's finger is rich in dietary fibres, minerals and vitamins. It is a low calorie vegetable and one of the suggested vegetable for weight reduction. This Okra raita is an easy and quick rice side dish recipe. Vendakkai Thayir Pachadi

Ingredients:
Lady's Finger / Okra / Vendakkai chopped 
1 Cup
Gingelly Oil
2 tsp
Mustard
1/4 tsp
Cumin seeds
1/2 tsp
Curry leaves
4
Turmeric powder
1/4 tsp
Coriander powder
1/2 tsp
Chilli powder
1 tsp
Curd
1/2 cup
Salt


Instructions:

  • Heat oil in the pan and add mustard, cumin seeds and curry leaves. 


  • When they splutter,add  chopped Lady's finger and fry till the veggie is cooked.

  • Once the Lady's finger is cooked, Switch off the stove. Add curd followed by salt, coriander powder, turmeric powder and chilli powder.

Tips:

  • Don't add dry powders before adding curd/yogurt. The dry powders will stick to bottom if they are added before yogurt.
  • In order to reduce stickiness in Lady's finger. Wash it and dry the vegetable in paper towel. Then chop it into small pieces.
  • Adding 1/4 tsp of lemon juice while frying Lady's finger also reduce stickiness.
